Super easy recipe and quite tasty. Next time I think I would add some cilantro as the flavour is quite basic. BUT the basic flavour is also great if you have a more overpowering main dish. Make sure to add enough salt as that makes a difference as well. I doubled the lime juice. The serving size is very generous, it could be cut in half and still make 4 servings. I love barley but I don't serve it by itself. This recipe is a nice way to add two simple ingredients to jazz plain barley up. I used quick barley so it only took 10 minutes to prepare. My husband and myself enjoyed this but the 3 little children did not find it as appealing as we did. One little girl, after announcing that she did not like it, changed her mind and declared, 'This is really good!'. I was going to add some Made for *Gimme 5 2009* game
