  • Peel and cube potatoes.
  • Boil until tender; drain.
  • Melt butter in pan.
  • Add cooked potatoes; brown.
  • Add caraway and cook a little longer.

  1. These were ready in less then 45 minutes. It only takes 10 minutes at the most to cube the potatoes, I never peel. Four minutes to boil, then 20 minutes to brown. The trick with browning, is to use a skillet large enough to have a single layer of potatoes touching its surface. I added 1/2 teaspoon of olive oil to prevent sticking. Open adding the caraway seeds, they began to jump in the skillet, so I turned off the heat and keep stirring. Made for Please Review My Recipe
     
  2. Very easy to make and delicious! Loved the caraway seeds in these. I added a sprinkling of parsley just before serving. I have cooked potatoes this way but usually fry off in a mix of oil and buitter but doing it in just butter I was worried about burning but I took it slowly and they browned beautifullly (about 20 minutes for a half recipe with the potatoes being one layer in the pan) but it is the caraway seeds that takes this recipe over the top, oh the smell when you add them to the pan is so aromatic and well they where enjoyed so much that we where wishing I had made more than the 3 serves I had scaled it back to using 4 medium and 1 small Carisma potatoe (a low GI potatoes).
