Leek Tomato Quinoa

- 354.88 ml quinoa
- 473.18 ml water
- 2.46 ml salt
- 14.79 ml butter
- 473.18 ml finely chopped leeks (white and pale green parts only)
- 59.14 ml low sodium chicken broth
- 44.37 ml olive oil
- 2 medium yellow tomatoes, seeded, chopped
- 44.37 ml chopped green onions
- 44.37 ml chopped fresh basil
- 14.79 ml fresh lemon juice
directions
- Place quinoa in strainer. Rinse under cold running water until water runs clear; drain.
- Mix quinoa, 2 cups water, and salt in heavy medium saucepan.
- Bring to boil. Reduce heat to medium-low, cover, and simmer until quinoa is just tender and almost all water is absorbed, about 20 minutes.
- Drain. Set aside. (Quinoa can be made 1 day ahead. Cool, then cover; chill.)
- Melt butter in large nonstick skillet over medium heat. Add leeks; sauté until beginning to soften, about 5 minutes.
- Add broth. Cover; simmer until leeks are tender, about 5 minutes.
- Add quinoa and oil; stir until heated through, about 5 minutes.
- Stir in tomatoes, onions, basil, and lemon juice. Season with salt and pepper.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there. Even the dog knows the command get outta my kitchen! LOL. Cooking for other people and trying new recipes or foods is FUN!
