a fantastic crunchy mix of diced veggies and garbanzo beans that goes well with any dressing or sauce you could imagine. Very healthy, packed with protein!

I halved the recipe and used a lemon poppyseed dressing and used red peppers instead of the green. What a great salad and you can add more or less of any of the ingredients. Made for Healthy Choices Tag Jan 2009

  1. dice all veggies.
  2. drain garbanzo beans.
  3. mix all ingredients together.
  4. top with dressing/sauce of your choice. I love it with honey dijon.
  5. Makes 4 lunch sized servings, or 6-8 as a side salad.
