YUM -- a margarita and a wing all in one! (These can be baked in the oven as well as grilled.)
- 2 lbs chicken wings
- 1⁄2 cup tequila
- 1⁄4 cup frozen orange juice concentrate
- 1 lemon, zest of, grated
- 1 lemon, juice of
- 2 garlic cloves, minced
- 1⁄2 teaspoon ground cumin
- 1 teaspoon fresh ground black pepper
- 1 teaspoon salt
- 2 tablespoons minced cilantro
- Wash the wings, pat dry and place in a large resealable plastic food bag.
- In a small bowl, combine the tequila, orange juice concentrate, lemon zest, lemon juice, garlic, cumin, black pepper, salt, and cilantro. Pour the marinade over the wings in the bag. Seal the bag and refrigerate several hours or overnight.
- Prepare a medium-hot charcoal fire or pre-heat a gas grill to medium-high.
- Drain the wings, discarding the marinade.
- Grill the wings, turning often, until they are slightly charred and cooked through, about 25 minutes.
- To bake: Preheat oven to 375 dg. and bake on cookie sheet for 45 minutes, turning once after 25 minutes, or until brown.
These are tasty wings.I had to use straight OJ,as I can't get concentrate,so I added a bit more to the marinade.I baked them off in the oven,and they came out beautifully.Such a simple yet tasty recipe.Thanks x.
MMMM, I made these and let them sit in my fridge for about 3-4 hours. We put 'em on the grill and they were AWESOME! So much flavor! They're sweet with a noticable tequila kick! Thanks for an awesome recipe! Mmmm, definitely a favorite and will be making again very soon!
