Saltimbocca is a Roman dish initially made with veal, whose name translates "jump in the mouth." This is a guaranteed crowd pleaser.

  1. Melt butter in skillet over medium heat; add olive oil.
  2. Season chicken with salt and pepper; dust with flour.
  3. Saute in skillet for approximately 5 minutes per side.
  4. Top each chicken breast with a sage leaf, 2 ounces of country ham, then cheese.
  5. Pour white wine into the skillet; simmer until cheese is melted.
  6. Serve immediately.

This was really a wonderful dish! I have had the veal version made with prosciutto and did not like it all. Way to salty for my taste. I wrapped the seasoned ckn. with thinly sliced honey ham with the sage leaves inside and secured with a toothpick. I topped each with a slice of jarlsburg when adding the wine. It was beautiful and delicious. Thx. for posting!
