Katie's Shortbread Cookies

  • Preheat oven to 350°F.
  • Cream butter and sugar together, scraping sides with spatula to get it well-mixed.
  • Add flour and vanilla - you may still need to scrape the sides. (It may not stick together completely, but that's okay!).
  • Roll out dough to 1/4- to 1/2-inch thick, and cut into cookie shapes.
  • Transfer cookies onto an ungreased cookie sheet--I recommend putting them on parchment paper.
  • Bake at 350°F for 11-14 minutes, watching so your cookies don't burn!
  • Cool on wire rack, and store in an airtight container when cooled.
  • *** FOR FUN! I melted down some chocolate and dipped the cookies in it--they made delicious and festive Christmas cookies!

I am a teenager who has recently discovered the delight of baking cookies and all things related to food. (Well, except meat--I'm a vegetarian!) I'm currently happily dating a boy I'm very fond of, and he is lucky to be the one who taste-tests all my food! :) I don't have a lot of cookbooks--I worship RecipeZaar. However, I asked for the Betty Crocker Cooky Book for Christmas! I also like my student's vegetarian cookbook and my 500 cookie book, although the best recipes are found here on RecipeZaar and through experimenting. I'm very into art, music, theatre, and literature (as well as baking--surprise surprise!). Hopefully I will be able to have a career encompassing at least one of these things. The most important thing I've ever learned is to treat others with respect.
