  • Cut a hole in the center of the bread with an upside down drinking glass.
  • Then melt one pat of butter in a small frying pan over low heat. Toss in the bread and break the egg into the hole. don't worry if you brak the yolk. Cook until the bread is golden brown on the bottom. You can peek with a spatula.
  • Turn the bread (with egg) over, put the remaining butter in the pan and use your spatula to make sure it gets under the toast. Continue frying until the egg looks done, no more than a couple of minutes.
  • Serve and enjoy!

  1. My mom used to make this for me as a kid. She would use a cookie cutter for the hole in the bread and make cute shapes for me. She would also fry the piece of bread she cut out. Same recipe though. Very, very yummy!

I'm a mother of two great kids, Kitty & Matthew. and trying to catch up for the lost time that I didn't make cookies and cakes for the kids ( or even a decent meal for my husband of 15 years Doug) while I in school studying to be a Nurse Practitioner. My 2008 New Years Resolution is to make dinner at least 3 times a week (no more yuckky take out..Be gone McDonalds!) .
