  • Place yams in dutch oven and cover with water. Bring to boil and cook yams until soft, about 45 minutes.
  • Drain. Mash with potato masher or large fork. Add sweetened coconut milk, rum, butter, evaporated milk, salt and pepper. Stir well until all ingredients are combined and smooth.
  • Grate fresh nutmeg over potatoes, fold into mixture. Grate more nutmeg on potatoes and fold into mixture again.
