- 6 yams, peeled and cubed
- 1 -2 cup sweetened coconut milk
- 1⁄2 cup dark rum
- 1⁄2 cup butter
- 1 -4 cup evaporated milk
- salt and pepper
- grated nutmeg
directions
- Place yams in dutch oven and cover with water. Bring to boil and cook yams until soft, about 45 minutes.
- Drain. Mash with potato masher or large fork. Add sweetened coconut milk, rum, butter, evaporated milk, salt and pepper. Stir well until all ingredients are combined and smooth.
- Grate fresh nutmeg over potatoes, fold into mixture. Grate more nutmeg on potatoes and fold into mixture again.
