Island Green Salad- Caribbean

"From a very old cookbook I found at Grandma's house, 'Foreign Foods.'"

• Ingredients: 3
• Serves: 6

ingredients

• assorted salad greens
• 1 cup carrot, finely grated
• 1 cup cheddar cheese, shredded

directions

1. Combine salad greens in a large bowl.
2. Mix cheese and carrot until blended.
3. Shape into small balls and place on top of greens.
4. Serve with your favorite salad dressing.

We all enjoyed this salad. We used Ranch dressing and we all liked it.

Easy, cute and very kid-friendly salad! Kids will love the carrot/cheese balls. To give the salad some more flavor and color, I added sliced red onions. I used a vinegarette dressing, while the kids enjoyed this with lowfat ranch dressing. Thanx for sharing!

I enjoyed this different salad! It was easy to form the carrot/cheese combo into balls and it looked pretty too. I used leaf lettuce and Vidalia dressing. Thanks Mama!
