Well, I hate to say it, but I hate eggplants! The recipe is good, well written, easy to follow. This is the second time I've tried this vegetable and I just don't like it. I liked the flavor of the recipe, but hate the eggplant. So I encourage any eggplant lover to try this recipe, as the flavors are very good!
