  • Spray a skillet with nonstick cooking spray and heat to medium high.
  • Chop eggplants to about 1 inch cubes.
  • Add eggplants along with garlic, ginger, green onions, and tamari in heated skillet and cook until eggplants are tender.
  • Remove from heat and drizzle with sesame oil.
  • Stir to combine.
  • Serve and enjoy!
  • Tastes great with steamed brown rice. :).

  1. This was very good. I like more than my husband so only 4 stars. I used regular eggplant as that it is hard to find Japanese eggplant here. It was pretty easy and smelled wonderful.
     
  2. I love eggplant too, and this recipe is a great (and easy) way to enjoy it. I made this as written using low sodium soy sauce. The sesame oil added a nice nutty flavor boost. Thanx for posting this; I'll make this again.
     
  3. Well, I hate to say it, but I hate eggplants! The recipe is good, well written, easy to follow. This is the second time I've tried this vegetable and I just don't like it. I liked the flavor of the recipe, but hate the eggplant. So I encourage any eggplant lover to try this recipe, as the flavors are very good!
