Great idea. I used cheaper cuts of pork and didn't mash the bones. Make sure you check the pot and stir every now and then. I wound up with a few scalded potatoes at the bottom. I also added some garlic, black pepper and paprika b/c that's what we had on hand - and that combo tasted good. Good comfort food.

  1. First put potatoes in kettle.
  2. Add ribs, carrots and onions; salt to taste.
  3. Bring to slow boil, cover and cook for about 3 hours.
  4. When done take out bones and mash.
