ingredients
- 2 honeycrisp apples, with skin on and chopped into bite-size cubes
- 709.77 ml baby arugula
- 5 slice prosciutto, sliced into pieces
- 14.79 ml raw honey
- 44.37 ml balsamic vinegar
- 29.58 ml light olive oil
- 2.46 ml ceylon cinnamon
- 3 scallions, chopped (green onions)
- 1.23 ml salt
- 1.23 ml pepper
- 29.58 ml pomegranate juice
- 29.58-44.37 ml parmigiano-reggiano cheese, grated (optional)
directions
- Put the arugula, proscuitto, onions, and apples into a large salad bowl.
- Mix together all of the dressing ingredients in a little bowl and pour over the salad.
- Toss to coat.
- Top with grated parmigiano reggiano (optional).
