Easy. Use low fat mayo for low fat salad. Add anything that takes your fancy - grapes, chiles, peppers etc. Prep time does not include cooking the chicken. Buy the cooked BBQ chicken from the store if you don't want to cook.
- 5 lbs chicken breasts, cooked and pulled
- 1 3⁄4 cups mayonnaise
- 1⁄2 cup toasted and chopped pecans
- 1 1⁄2 tablespoons honey
- lemon juice
- Mix all ingredients together.
Everyone that I make this for absolutely loves it. They even started serving it at the salad bar I use to work in.This is my favorite chicken salad.
