Honey Garlic Carrots

  • 2 tablespoons butter
  • 1 lb carrot, peeled and cut into 1/4 ",thick diagonal slices
  • 2 tablespoons minced garlic
  • 2 tablespoons honey
  • salt and pepper
  • 34 cup water

directions

  • In nonstick skillet melt butter over medium heat.
  • Add carrots and garlic stirring until mixed.
  • Add 3/4 cup water and heat until boiling.
  • Add the honey and seasonings to taste.
  • Simmer and reduce liquid until just a thin film is left, about 7-10 minutes, stirring occasionally.

  1. My family of four enjoyed these. My daugter said too much garlic but she always has to complain about something(she is a teenager). I will never cook carrots my usual way again.

Living in the south we are very lucky to have an abundance of fresh seafood and other ingredients at our disposal when trying new recipes. My husband and I both love to cook and have learned a lot about cooking from our native Louisianian, Paul Prudhomme (we learned to be very careful with his recipes as they are very spicy - even for us), native New Orleanian, Frank Davis and transplanted Emeril Lagasse. It would be very difficult to pick an all time favorite cookbook since I have approximately 200. I enjoy collecting local cookbooks as well as others from different areas. This picture is obviously when DH and I got married. I cooked all the food and even made my wedding cake.
