Hershey's St. Patrick's Day Parfaits

"Yummy!! Got it from a Hershey's choc dessert cookbook. Prep time does not include chilling time. I chill these although the original recipe permits freezing as well."

  • Combine marshmallows and milk in a saucepan over low heat; stir until mixture is smooth.
  • Measure one cup into a bowl, add creme de menthe.
  • Add melted chocolate chips and sugar to remaining marshmallow mixture.
  • Leave to cool to room temperature.
  • Whip cream until stiff, divide into 2.
  • You can also use 3 cups of whipped topping, divided.
  • Fold half into creme de menthe mixture, and the other half into the chocolate mixture.
  • Alternately spoon mixtures into parfait glasses.
  • Chill, garnish with mint leaves or shaved chocolate.

  1. Made these the other night. I thought they were very good. My boys didn't care for them saying "they are too sweet" . T he chocolate layer was kinda lumpy maybe I let it cool too long before spooning into the dishes. It was still tasty. It tamed my craving for chocolate and mint. One of my favorite combos :) Thanks for sharing.

Hi .. The pic is of my beautiful son, born on 2/5/2005. His name is Tariq, meaning Bright Star. As I type this, he is blowing bubbles in his water cup and watching cartoons. He whined to get this water for 15 mins and now he won't drink it, he will only play with it. Sigh.. A few days ago he came up with this song, so sing along to the tune of "Old McDonald" : Old McTariq Laq Laq Laq E I E I OOOOOO LOL I thought it was the cutest thing :-) When I'm not running around after my son, or cleaning up the mess he makes wherever he goes, I cook and bake (my husband loves the blueberry muffins I make) and I love trying new recipes .. I also love to read, and collect sci-fi/fantasy novels .. I have over 500 books and still counting ..
