This recipe was in the Heart Smart® cook book published by the Henry Ford Heart Center and the Detroit Free Press. It's a great, fast spread for a bagel or toast to get your morning-motor running.
- Combine all ingredients in a food processor or blender and blend till completely smooth.
- Serving size = 1 tablespoon.
I don't like cottage cheese but I made this because I was looking for a breakfast option for Diabetic MIL and Heart Bypass FIL. They both found it to be rather plain. DS liked it on his bagel. Mixed up another batch using Strawberry Coulis sweetened with Splenda and minus the liquor. While there were no raves both-in-laws liked it and agreed that it was nicer with the strawberry flavour went better with the cheese.
