- 3⁄4 cup softened butter
- 1 cup brown sugar
- 1 1⁄2 cups flour (white or brown)
- 1⁄2 cup wheat germ
- 1⁄4 cup molasses
- 1 egg
- 1⁄2 teaspoon ground cloves or 1/2 teaspoon allspice
- 1⁄2 teaspoon ground ginger
- 1 teaspoon cinnamon
- 2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 3 1⁄2 ounces crystallized ginger or 100 g crystallized ginger
directions
- Beat butter, sugar, molasses and egg. Beat at speed 3 for 30 sec.
- Whisk together flour, wheat germ, cloves, ginger, cinnamon, ground ginger, baking soda, and salt.
- Add wet to dry. Mix well.
- Add crystallized ginger HINT: chop with wet knife.
- Chill for an hour (can chill overnight).
- Preheat oven to 375°F.
- roll into 1-inch ballls, roll in granulated sugar (optinal).
- Place on greased cookie sheet two inches apart.
- Bake 8-10 minutes DO NOT OVERBAKE.
