Healthier Slow Cooker Pernil

  • In a mortar and pestle or food processor, make a paste with garlic, oregano, cilantro, cumin, paprika, salt, pepper, lime juice and olive oil.
  • Using a pairing knife, make slits inside the pork loin.
  • Rub the garlic mixture all over the pork loin, making sure to get some of it into the holes you made with the knife.
  • Add a few tablespoons of water to the bottom of a slow cooker. Place the seasoned pork loin inside. Place on low, cover and cook for 4-5 hours, until the pork is tender.
  • Allow pork to rest for thirty minutes before slicing and serving.
