- 2 -3 lbs pork loin roast
- 12 garlic cloves
- 1 tablespoon dried oregano
- 1⁄4 cup cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 1 lime, juice of
- 1 tablespoon olive oil
directions
- In a mortar and pestle or food processor, make a paste with garlic, oregano, cilantro, cumin, paprika, salt, pepper, lime juice and olive oil.
- Using a pairing knife, make slits inside the pork loin.
- Rub the garlic mixture all over the pork loin, making sure to get some of it into the holes you made with the knife.
- Add a few tablespoons of water to the bottom of a slow cooker. Place the seasoned pork loin inside. Place on low, cover and cook for 4-5 hours, until the pork is tender.
- Allow pork to rest for thirty minutes before slicing and serving.
