This sweet butter is wonderful with pancakes or waffles. Also great on a warm cinnamon muffin.
- Preheat oven to 350.
- Toast hazlenuts on baking sheet for 10 - 15 minutes or until they are fragrant. Make sure to shake pan several times during roasting.
- Dump them onto a kitchen towel and fold the towel over so they will steam. Let cool for 15 minutes and then rub with towel to release the skin.
- Process nuts in a food processor until they are finely chopped. Add butter in small pieces along with the vanilla and process until smooth.
- Refrigerate butter until needed.
Delicious! We really enjoyed this quick and easy butter on our breakfast bagels. Toasting the hazelnuts really brings out their nutty flavor. My family thought it needed a touch of sweetness, so I added approx. 1 tsp. of honey to the food processor when I added the vanilla.
