Gluten Free, Vegan, No Sugar Added Oatmeal Cookies. Using blueberries instead of raisins.
- 6 bananas, ripe
- 2⁄3 cup unsweetened applesauce
- 4 cups gluten-free oats
- 1⁄2 cup almond milk
- 1 cup dried blueberries
- 2 teaspoons cinnamon
- 1 teaspoon vanilla
- Preheat oven to 350.
- Cover baking sheets (may need 2) with aluminum foil.
- Peel and mash bananas in a large bowl.
- Stir in all other ingredients except oats.
- Add oats, one cup at a time.
- Using an ice cream scoop, place mixture on baking about an inch apart (they will not spread).
- Bake for 20 minutes.
