Quick, easy, yummy, comfort food (i.e. not healthy!)

Real comfort food! DD (toddler) and I enjoyed this for a quick to the table breakfast. Don't use a cast iron frying pan though as it made the egg whites change colour from the acid of the tomato. I admit I didn't use olive oil (ran out and it's holiday for the stores!) I used all butter & shoestring fries to be quick. I also sliced and chopped the tomato as I don't know how to grate a tomato.. I will make this again.

  1. Heat butter and oil in pan cook tomatoes over medium heat until most of the liquid has been absorbed.
  2. lower heat break whole eggs into sauce, cover pan with lid
  3. when eggs are done pour tomato egg mixture over hot chips, add salt and pepper to taste.
