My Grandmother made these when I was a kid 30 years ago, long before the movie made them popular again.

My family also calls these One Eyed Jack. But I don't toast my bread before hand. I take a slice of bread and cut the center out with a biscuit cutter like you said. I butter the bread on one side, then put some butter in center before breaking egg into it. If someone doesn't like sunny side up eggs, you can scramble the egg before putting into center of bread. If you cook over low-medium, the egg has time to cook correctly and toast bread too. While egg is cooking, I carefully place a tab of butter at all four corners of untoasted side. When egg is set, I turn over with a spatula.

Ingredients Nutrition

  1. Toast the bread (yes, otherwise the egg is over done before the bread is browned).
  2. Heat your frying pan to medium high.
  3. With a biscuit cutter cut the center out of your slice of toast.
  4. Put the toast slice without the center in the heated pan.
  5. Put 2 teaspoons butter in the middle.
  6. Carefully crack the egg into the center.
  7. salt and pepper to taste.
  8. Cook the egg until it is done to your preference (this is supposed to be sunny side up but you can turn if you desire).
  9. Butter and Jelly the remaining center.
  10. and serve together.
  11. Grandpa's Variation. He liked catsup on his eggs. Carefully put a teaspoon of catsup next to the yolk while cooking. Interesting visual effect.
