    Potatoes get their golden color from the annotto oil. Flavored simply with salt, pepper & garlic.

      Heat annatto oil (adding more if needed) in a heavy skillet over medium-high heat.
    2. 2
      Add potatoes and sprinkle with salt and pepper to taste.
    3. 3
      Sauté for about 5 minutes, reduce heat and cook for 5 minutes add garlic, continue cooking stirring occasionally, until potatoes are cooked through.

      Season with salt and pepper again and serve.

      Loved the easy prep of this OUTSTANDING RECIPE as well as the great taste! I didn't peel the potatoes & did substitute lemon pepper for the S&P!       Delicious and so easy to make! These potatoes made a wonderful side dish for grilled steaks. Thanks bunches for sending me the annatto seeds so I could make these!! Made for ZWTIII

      This was part of a Caribbean meal my family shared tonight. I decided to cube my potatoes and bake them in the oven but I did use the ingredients listed. I used Rita's Annatto Oil. The colour of these potatoes was a lovely golden colour with a subtle flavour. Reviewed fr ZWT3
