This is a nice lightly sweetened dessert. Very refreshing after a spicy meal.
- 1 cup low-fat sour cream (can use yogurt)
- 1⁄4 cup honey
- 2 tablespoons candied ginger, small chop
- 1 (1 lb) can pineapple chunk, chilled and drained
- 1 1⁄2 teaspoons Amaretto (optional)
- Combine sour cream, honey and ginger.
- Toss drained pineapple with Amaretto.
- Spoon sour cream mixture over pineapple in individual serving dishes.
