A refreshing salad great for a diabetic diet!
- 2 tablespoons rice vinegar
- 1 tablespoon fresh ginger, finely minced
- 1 tablespoon honey
- 1⁄8 teaspoon salt
- 2 cups cherry tomatoes or 2 cups grape tomatoes, sliced in 1/2
- 1⁄4 cup scallion, sliced
- Mix the the first 4 ingredients toss in tomatoes and scallions and chill 1/2 hour then serve.
What a yummy tomato salad, very different! I left out the honey (personal preference). I loved the raw ginger in it, but it could be strong for some people. Thanks for this new variation on tomato salad.
A delightfully different tomato salad. The ginger gives this tomato salad a wonderful new twist. Made as written and fond the 1/2 chill time to be just the right amount of marinating time. Thanks so much for the post.
I'm not rating this as I subbed balsamic vinegar and maybe that was an error, the dressing totally overpowered the tomato. Omitted the scallion. It looked really pretty though.
