ingredients
- 1⁄4 cup butter or 1/4 cup margarine, softened
- 1⁄4 cup granulated sugar
- 1 egg
- 1⁄2 cup molasses
- 1⁄4 cup hot water
- 1 3⁄4 cups all-purpose flour
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon ginger
- 1⁄4 teaspoon clove
- 1⁄4 cup hot water
directions
- Combine butter, sugar, egg, molasses and first amount of hot water in mixing bowl.
- Beat together well.
- Measure next 6 ingredients into same bowl.
- Stir.
- Gradually stir second amount of hot water into batter.
- Fill greased muffin cups 3/4 full.
- Bake in 400 degree oven for 20-25 minutes until toothpick comes out clean.
- Cool in pan 5 minutes, then remove.

I really wanted to like these but the molasses flavour is a little too strong and leaves an aftertaste so strong that my boyfriend wouldn't even eat them and he usually hoovers down almost anything. I followed the recipe exactly, they were done in 20 minutes and were very simple to make. I would like to make these again and perhaps use fresh grated ginger and less molasses - perhaps 1/4 cup but as written I would not make them again. Thanks for posting.
