- 8 slices whole wheat bread
- 4 hard-boiled eggs
- 4 tablespoons light mayonnaise
- 1⁄2 cup grated carrot
- 1⁄2 cup diced celery
- 1 cup fresh spinach
directions
- Chop eggs and mix with carrots, celery and mayo. Season with salt and pepper to taste.
- Toast bread and top with spinach, then a scoop of egg salad.
