- 4 cups cubed whole grain bread
- 2 green apples, cored and grated with skin on
- 1⁄3 cup chopped dried apricot
- 1⁄3 cup chopped dates
- 1⁄3 cup golden raisin
- 2 cups milk, I used vanilla soy
- 1⁄3 cup sucanat
- 1 tablespoon cornstarch
- 1⁄2 teaspoon cinnamon
- 1⁄8 teaspoon nutmeg
- 1⁄4 teaspoon salt

- 1 cup milk, I used vanilla soy
- 1⁄3 cup sucanat
- 1 tablespoon cornstarch
- 1⁄8 teaspoon salt
- 2 teaspoons vanilla
directions
- Preheat the oven to 350 degrees.
- Place the whole-grain bread cubes in a large bowl and add the grated apple, dried fruits, milk, Sucanat, cornstarch, cinnamon, nutmeg, and salt.
- Mix well, then spoon into a 9x9-inch baking dish.
- Cover with foil and bake for 40 minutes.
- Remove from the oven and discard the foil.
- To prepare the sweet milk sauce, mix the milk, Sucanat, cornstarch, and salt in a saucepan and heat, stirring constantly, until thickened. Stir in th vanilla and pour over the pudding before serving.
