"This is a delicious dessert that is easy and fast to make. It comes from my Garden Cuisine cookbook by Paul Werner. The dried fruits listed below are the ones given in the original recipe however, I just used whatever I had around the house."

  • 4 cups cubed whole grain bread
  • 2 green apples, cored and grated with skin on
  • 13 cup chopped dried apricot
  • 13 cup chopped dates
  • 13 cup golden raisin
  • 2 cups milk, I used vanilla soy
  • 13 cup sucanat
  • 1 tablespoon cornstarch
  • 12 teaspoon cinnamon
  • 18 teaspoon nutmeg
  • 14 teaspoon salt
  • sweet milk sauce

  • 1 cup milk, I used vanilla soy
  • 13 cup sucanat
  • 1 tablespoon cornstarch
  • 18 teaspoon salt
  • 2 teaspoons vanilla

directions

  • Preheat the oven to 350 degrees.
  • Place the whole-grain bread cubes in a large bowl and add the grated apple, dried fruits, milk, Sucanat, cornstarch, cinnamon, nutmeg, and salt.
  • Mix well, then spoon into a 9x9-inch baking dish.
  • Cover with foil and bake for 40 minutes.
  • Remove from the oven and discard the foil.
  • To prepare the sweet milk sauce, mix the milk, Sucanat, cornstarch, and salt in a saucepan and heat, stirring constantly, until thickened. Stir in th vanilla and pour over the pudding before serving.
