- butter (for frying)
- 1 egg
- 2 tablespoons whipping cream (or use half and half cream)
- salt and pepper
- 1 slice cheddar cheese
directions
- In a bowl whisk eggs with cream until well combined.
- Season with salt and pepper.
- Melt butter in a skillet, then pour the eggs into the skillet; cook until bubbles appear then fip over.
- Cook about 10 seconds, then cover with the slice of cheese.
- Cook another 10 seconds or until cheese is melted.

I have made this twice and both times it was great! I used a non stick skillet only sprayed with pam and did use the cream the first time, and it was very rich tasting. Second time I just used milk and mixed my cheese and some crumbled cooked bacon in. Cook it slow over low heat so as not to toughed the egg and make sure the egg moves otherwise you cant flip it. I also used my smallest skillet 6 inches and by the time it takes to toast a bagel or english muffin your egg is finished and ready for a quick out the door breakfast sandwich! Thanks Kitten!
