Finger Lickin' Good Chicken Marinade

"I got the recipe for this incredibly tasty marinade from a neighbor at a cookout 17 years ago. I haven't found a better marinade for my chicken since then! I use it in baking chicken, but I mostly use it to grill chicken sandwiches, topped with Muenster cheese on a grilled Kaiser roll. Yummy!"

  1. Yummy! This is delicous! I used it to marinate boneless chicken breasts, then make them into chicken sandwiches on kaiser rolls as suggested. I will try it on BBQ'd chicken this Spring. This time I broiled the chicken breasts. I let the chicken breasts sit in the marinade for about 2 days. They were an ugly color, but very flavorful.
     
  2. Very juicy and tasty. I used 3 times the lemon because we love it and made one fourth the recipe for 2 breasts (which was way more than enough). I might do even half of that - even with the reduced sodium soy sauce, it does have a fair amount of saltiness.
     
  3. This was a tasty marinade! I started mine very early in the morning, and that was plenty of time. Tender and moist after grilling, it also had a great flavor! I may try it on a sandwich next time! Thanks for sharing, SuzieQ in Fairfax!

  5. Very easy to throw together using chicken thighs last night! Cooked in a frying pan tonight, we enjoyed the thighs cut up in wraps with avocado, tomato, lettuce, a bit of cheese and sour cream. Made for 2009 Favourites tag and I would make it again. Thanks SuzieQ! :)

In recent years, however, I've discovered how to enjoy the LOVE and pure enjoyment of cooking. It's now a big part of who I am, as corny as that may sound! It has also trickled down and become a joy and a real treat for my family as well... they love everything I make, and are my best critics. They enjoy eating what I make as much as I enjoy making it! My daughter loves the fact that I cook so well and she brags about it to all her friends, which is really cute. I have a long way to go before I can really call myself an accomplished cook (in fact, I don't know If I'll ever be able to call myself that! We'll see...). But my family sure has a lot of faith in my. Time will tell if I become what my family already believes I am. :o)
