Directions

  1. Preheat oven to 400 degrees F.
  2. Rub the oil over the chicken pieces.
  3. Place flour, Cajun seasoning, cayenne pepper and salt in large bowl and mix well.
  4. Toss chicken pieces in the flour until lightly coated.
  5. Place them on a wire rack and sit rack on a baking sheet.
  6. Cook chicken for 35-45 minutes until cooked through and skin is crispy.
  7. Serve hot.

I'm sorry, but this just didn't work out for us. At the end of the bake time it still look pale and unattractive. I ended up finishing it in a frying pan to give it some color. The flavor was good. I think I will play around with this a bit, maybe it's just my stove.

These were delicious! I used the chicken thighs and removed the skin. They still crisped up really well. I reduced the cayenne to about 1/2 tsp per recipe and they still had a good bit of bite to them. I did have to double the breading mixture, but I had 9 very large thighs. I baked them for 1 hour. I served them with a salad and seasoned green beans. A great, easy dinner. Thank you for sharing.
