  • Preheat oven to 350°F, then use butter to grease 13x9-inch baking dish.
  • In small skillet, sauté onions & mushrooms in olive oil until tender.
  • Spoon onions & mushrooms into baking dish.
  • Add ham, potatoes & cheese to baking dish.
  • Add beaten eggs to baking dish, & mix well.
  • Salt & pepper to taste.
  • Bake uncovered 25-30 minutes or until eggs have set.
  • Nice served with toast & fresh fruit.

  1. I used too much "stuff" so even 4 eggs didn't hold it together, but it was still yummy! I think it would need some red pepper or tomato for a more festive look. I'll try that next time :)
     
  2. Easy and delicious! I used cooking spray on the baking dish and omitted the salt (personal preference). Loved all of the flavors, and it would be very easy to add other veggies to taste. We enjoyed it for supper with Recipe #408733. Thanks for sharing!
     
  3. Delicious and satisfying, lends to make-ahead cooking for weekday on-the-run breakfasts. To appear festive, this dish cried out for colorful topping accents from red and/or green bell pepper or roasted red pepper or chopped fresh chives or green onion. I needed a 4th egg for my "glue". I think a 13x9 baking dish is too large; I used a 11x7.5-inch Pyrex baking dish (2.2 qts), which was a perfect size. The portion size is accurate. Thanks for sharing this recipe, Sydney Mike!   4. Fantastic - I loved this breakfast dish! I scaled this down to 2 servings and left out the onions as I don't care for them. I had a couple of small red potatoes, so just diced them up and sauted them with the mushrooms. This dish went together so quickly and is so delicious. A wonderful breakfast treat - thanks for sharing!
