Easy English Toffee

"I had an aunt that brought this to a Christmas gathering, and I couldn't get enough of it. She gave me the recipe, and I was surprised to find saltine crackers as the main ingredient! I think toffee is my weakness.."

  • In a small saucepan, over med-high heat, blend butter and brown sugar.
  • Heat to boiling and boil 4 minutes (exactly 4 minutes).
  • Cover a cookie sheet with foil, and butter lightly.
  • Place a single layer of saltines on the foil touching but not overlapping.
  • Pour the butter mixture over crackers, spreading evenly.
  • Bake at 375 degrees for 5 minutes.
  • Immediately sprinkle chocolate chips over the top of the hot crackers.
  • Allow to soften, then spread evenly over crackers.
  • Sprinkle with nuts.
  • Refrigerate until cool.
  • Break into pieces and serve.

  1. I've never heard of using saltine crackers to make toffee and was a bit skeptical. I couldn't believe how easy this toffee was to make, and SO yummy. I made two batches, my crackers weren't salted so I sprinkled a little on the crackers of the second batch and it really improved the flavor. I also couldn't believe how the chocolate just melted and all I had to do was spread it out with a knife. Although, I have to say it's pretty obvious a saltine cracker is the main ingredient. I will make these again and again! Thanks for the recipe!
