  • Preheat oven to 425 degrees. Place chicken on a rack in a roasting pan or cast-iron skillet.
  • In a blender or food processor, combine garlic, lemon zest, and rosemary. Spread puree under the skin of the chicken.
  • Sprinkle generously with salt and pepper.
  • Cook the chicken for 15 minutes for each pound, plus 15 minutes (i.e., a 3-lb bird: 15 minutes x 3 + 15 minutes = 60 minutes).
  • Chicken is done when juices run clear when pricked with a fork.
