Delicious Nutritious Banana Bread

"This is a healthier version of our favorite banana bread recipe. It has very little fat yet still moist and light. The maple syrup also adds a nice depth of flavor. I use white whole wheat which is lighter, milder and less dense than regular whole wheat and would recommend it for this recipe. King Arthur Flour carries it."

• Yields: 1 loaf
• Serves: 4-6

ingredients

• 1⁄4 cup honey
• 1⁄4 cup real maple syrup
• 2 teaspoons vanilla
• 2 eggs
• 3 bananas, mashed
• 1⁄4 cup milk
• 2 1⁄2 cups whole wheat flour
• 1⁄4 cup ground flax seeds
• 2 teaspoons baking powder
• 1⁄2 teaspoon baking soda
• 3⁄4 teaspoon salt

directions

1. Pre-heat oven to 350°F.
2. Stir together all the wet ingredients (first 6) in a large bowl.
3. In a smaller bowl stir together the dry ingredients.
4. Add dry ingredients to the wet and mix until basically smooth.
5. Pour batter into a well greased loaf pan and place into the oven to bake for 50-60 min or until tooth pick comes out fairly clean.

I really loved this bread, it turned out perfectly for me. Unfortunately I did not have pure maple syrup so I just used another 1/4 cup of honey to make up for it. I also did not have ground flax seed which I would have made a lovely addition. I found that this was a delicious loaf and had the right amount of sweetness for me. Did love that it was low fat and very healthy. Maple syrup and bananas is a winning combo, sadly we found that the bread was some what disappointing. Just not sweet enough for us.
