    1. 1
Half-fill a deep pan with melted fat or oil. Heat until a faint haze rises from it (or until a bread cube sinks to the bottom of the pan, rises to the top immediately and turns golden in 50 seconds).
    2. 2
Sift the flour and salt into a bowl.
    3. 3
Beat to a smooth batter, unbeaten egg, butter and milk. Then add the flour and salt mixture.
    4. 4
Coat 2 pieces of fish with batter.
    5. 5
Lift into the pan with a fork or kitchen tongs.
    6. 6
Fry until crisp and golden, allowing about 6-8 minutes for large pieces and 4-5 minutes for medium.
    7. 7
Remove from the pan and drain on absorbent kitchen paper.
    8. 8
      Repeat with the remaining fish.
    9. 9
      Garnish with lemon wedges.

This was a very good fish batter. Nice and crispy. Will use it again soon. Thanks for posting.

This was hands down the best fried fish batter I have evr used! I used the self rising flour (which I made with hcopeland's recipe here on recipezaar, which is 1 c. flour, 1 1/2 t. baking powder, and 1/2 t. salt) and measured it out to 4 oz (which is slightly less than 1 cup). I used a deep frier and the batter was so good on it's own, I wanted to fry everything in it! Next on my list for it will b onion rings and apple fritters. Thanks for the great and easy recipe!
