This is a wonderful spread to serve guests. Travels well once it has been chilled in the refrigerator.

Ingredients Nutrition

  • 14 cup pineapple juice
  • 12 orange pulp
  • 12 cup nuts
  • 34 cup pitted dates

Directions

  1. In a blender or food processor combine the pineapple juice and pulp from 1/2 an orange. Cover and blend on high speed for 5-10 seconds to combine.
  2. Add nuts and pitted dates to blender. Mix on high speed for 30 seconds, stirring down mixture when necessary.
  3. Transfer to serving dish and chill.

I doubled this recipe & used the more moist, chewy Medjool dates along with cashews & made AN EXTREMELY TASTY SPREAD that we enjoyed on both toasted English muffins as well as on a flavorful & heavy whole wheat bread!
