Date and Apricot Loaf

  • Add dates to hot coffee and allow to soften and cool.
  • Add vanilla and butter to the date mixture.
  • In a separate bowl, mix flour with sugar and cinnamon. Make a well in the centre, add coffee mixture.
  • Mix through, add eggs and stir until just combined.
  • Add dried apricots and walnuts, stir through but do not overmix.
  • Bake in a loaf pan at 180 degrees (350) for one hour; if top browns too quickly cover with foil. Test with a skewer.

  1. I used the 3/4 cup of sugar and think next time I would add a whole cup. I would have liked it just a little sweeter. It came out very nice and I would definitely make it again.
     
  2. This baked up into a beautiful, well rounded loaf that was done in about 50 minutes. The bread is full of flavor and very moist. The combination of dates and dried apricots is wonderful. I did use the 3/4 cup brown sugar, recipe #145505 in place of the cinnamon and pecans in place of walnuts. Thanks much for posting this delicious recipe.

  4. Great tasting loaf! Loved the taste combo of dates, apricots & nuts! I did substitute an herbal tea for the coffee, but other than that, directions were followed! I did serve it up with honey butter! Will be making this again! [Made & reviewed for one of my teammates in the Aus/NZ Recipe Swap #15]

I'm 28, married, and with two furkids-a cute cat, she's an Australian Mist called Kismet, and a chocolate labrador called Indiana Jones. Live in North West Sydney, and have all my life except for a short stint in Germany just after we were married. I am an engineer by degree, but have recently left a large telecommunications company to work in a small Veterinary hospital as a vet nurse. I like camping and 4wding, fishing and horseriding, having parties and barbeques. We're ex-Scouts and still love to travel even if it's just a short break to the mountains, or to the wine regions. I love baking and experimenting with different cuisines. I wont cook things with too many ingredients, or that are too fiddly, or which take too long (or too expensive for that matter!). I'm a dab hand at modifying the 67c home brand packet cake. My husband is Swiss-Australian, so I have a bit of that European influence as well, and try to reproduce our favourite Swiss recipes as accurately as possible. I am hopefully trying for my Swiss citizenship once I've studied up for my interview! We love travelling, and after visiting Vietnam in 2008 I'm obsessed with both the country and the cuisine, it's so varied and fresh and amazing!
