Simple, without the onion and tomatoes that most cucumber recipes call for. A lot of people in my family hate the texture of those veggies so this is my alternative. Couldn't get any easier than this.

Ingredients Nutrition

  • 1 cucumber
  • 4 tablespoons fat-free Italian salad dressing


  1. Peel cucumber and slice.
  2. "De-gut" center of cucumber to take away seeds and 'mushy' part.
  3. Put cucumber slices in bowl and pour fat free italian dressing on top.
  4. Best if chilled overnight, but can be eaten right away.

I made these as an after school snack for my son. Mine soaked for about an hour and my son really enjoyed them. I had used seedless cucumbers so I just peeled and cut. Easy and good. Made for Spring PAC 2011.
