Simple, without the onion and tomatoes that most cucumber recipes call for. A lot of people in my family hate the texture of those veggies so this is my alternative. Couldn't get any easier than this.
- Peel cucumber and slice.
- "De-gut" center of cucumber to take away seeds and 'mushy' part.
- Put cucumber slices in bowl and pour fat free italian dressing on top.
- Best if chilled overnight, but can be eaten right away.
I made these as an after school snack for my son. Mine soaked for about an hour and my son really enjoyed them. I had used seedless cucumbers so I just peeled and cut. Easy and good. Made for Spring PAC 2011.
