- 24 small red potatoes
- 4 tablespoons butter
- 1 green onion, minced
- 2 garlic cloves, minced
- 1⁄4 cup chopped parsley
- 1⁄2 teaspoon lemon juice
- 1 chives, minced
- parsley sprig (to garnish)
directions
- Boil potatoes approximately 25 minutes.
- Melt butter in an 8 inch skillet. Saute green onion and garlic for 3 minutes. Stir in parsley and lemon juice.
- Drain potatoes and place in a serving dish. Pout butter mixture over potatoes to thoroughly coat. Sprinkle chives on top of the potatoes. Garnish with parsley sprigs.
