These are an easy and flavorful potato for weeknight or weekends. Can also be made with small white potatoes.

  1. Boil potatoes approximately 25 minutes.
  2. Melt butter in an 8 inch skillet. Saute green onion and garlic for 3 minutes. Stir in parsley and lemon juice.
  3. Drain potatoes and place in a serving dish. Pout butter mixture over potatoes to thoroughly coat. Sprinkle chives on top of the potatoes. Garnish with parsley sprigs.
