- 16 ounces corn (frozen, fresh or canned)
- 1 (6 ounce) can green chili peppers
- 1 red bell pepper, diced
- 1 tablespoon butter
- 1 tablespoon minced garlic
- salt, to taste
- 1 teaspoon cumin
- 1 teaspoon basil
directions
- Saute pepper and garlic until browned.
- Add chile, spices, butter and corn.
- Heat through and serve.

This was a great recipe for those who love a touch of Mexico. The second time I tried this I made it semi-homemade. I used a leading canned mexican corn which already has the peppers added. I melted the butter, saute the garlic and then added salt and cumin and corn. I didn't have basil so I used cilantro which worked as well. All in all a good recipe, one I will keep.

I love to cook, bake, quilt, sew, crochet and craft. I was married in 2003 so I am spoiling my husband rotten for a living.
