  1. Very easy to make and tasty too. I subbed fresh cilantro for the basil and added a squeeze of lime juice just before serving. Very fresh and summery tasting!
     
  2. This was a great recipe for those who love a touch of Mexico. The second time I tried this I made it semi-homemade. I used a leading canned mexican corn which already has the peppers added. I melted the butter, saute the garlic and then added salt and cumin and corn. I didn't have basil so I used cilantro which worked as well. All in all a good recipe, one I will keep.

I love to cook, bake, quilt, sew, crochet and craft. I was married in 2003 so I am spoiling my husband rotten for a living. (I also have a masters degree in biomedical engineering--but husband spoiling is my preferred pastime) I am counting down the years until we have our house paid off, I can quit my job and we can start our family--since I am only 23, we have about 5 more years to go!!
