ingredients
- 236.59 ml original soymilk
- 4 eggs or 236.59 ml Egg Beaters egg substitute
- 59.14 ml chopped fresh cilantro
- 2.46 ml chili powder
- 1.23 ml salt
- 1.23 ml pepper
- 236.59 ml frozen whole kernel corn (thawed)
- 177.44 ml shredded reduced-fat cheddar cheese (3 oz)
- 1 medium tomatoes, seeded, chopped (3/4 cup)
directions
- Heat oven to 350°F
- Spray 9-inch glass pie plate with cooking spray.
- In medium bowl, stir together all ingredients except corn, cheese and tomato until blended.
- Stir in remaining ingredients; pour into pie plate.
- Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
