  • Whisk 1/4 cup of fresh lime juice, 1/4 cup of olive oil, 1 T of minced garlic for a marinade -.
  • Add the corn, black beans, cilantro, and red pell pepper to the marinade mixture and let the flavors come together.
  • Separately -- bake the Simply Potatoes diced potato with onion with a drizzle of olive oil, salt and pepper - or pan fry them until tender --.
  • When potatoes have thoroughly cooled, place the baked (or pan seared) potatoes on the bottom of the dish, add the marinated corn, black beans, cilantor and red bell pepper on top -- serve with a sprig of fresh cilantro and a few dices of fresh tomato.
