Send your kids off to school with this in their lunchbox! A fun way to get food that's good for you!

Ingredients Nutrition

  • 1 (5 ounce) canchunk canned chicken, breast, drained and flaked (you might try tuna)
  • 14 cup mayonnaise or 14 cup salad dressing
  • 14 cup shredded carrot
  • 2 tablespoons raisins
  • 2 tablespoons chopped dry roasted peanuts
  • salt and pepper
  • 2 ice cream cones
  • lettuce leaf

Directions

  1. Combine first 5 ingredients. Season to taste.
  2. Line cones with lettuce, and spoon in filling.
  3. Enjoy!

What a creative idea :). Made this for DS and I for lunch today, though I did use canned tuna, (thats what I had on hand), made for a delightful light lunch. Though my DS thought at first are we having ice cream for lunch.. I might have during my bacholer days, she gave it a 5 for creativity. We enjoyed the veggies in these little treats, and will be making these later in the week for an after school treat, and lunch for myself with some of the remaining cones. Tagged and made for PRMR.

Our DS's loved this, I didn't really measure the ingredients, plus I used leftover turkey, I pretty much just added raisins, carrots, etc just until it looked 'good enough' Thanks for a fun post Sharon 123!

These are a great idea for young children. I love the idea of serving chicken salad in an ice cream cone! This was a simple way to get kids to eat their lunch. 5 stars for presentation, but the 4 stars was for the salad itself. It needed a bit more flavor -the mayo needed some flavoring-perhaps some lemon pepper or some minced herbs, minced onion, even garlic powder. But still very good as is and a great idea!
