- 1 cup cornmeal
- 1 teaspoon salt
- 1 cup cold water
- 3 cups boiling water
directions
- Mix cornmeal, cold water & salt.
- Slowly stir cornmeal mixture into the boiling water in a saucepan.
- Cook and stir until thick.
- Lower heat.
- Cover and cook 15 minutes, stirring as needed.

This was surprisingly yummy. I have a lot of cornmeal to use up before we move and went on a search for easy ways to use it. The directions were great on this. I served mine with a spritz of butter spray, a little pinch of splenda brown, and some skim milk. This will probably become a winter breakfast staple. This is simple comforting food. Thanks.
