This pesto is a suggested variation on a traditional basil pesto taken from Diana Shaw's Essential Vegetarian. It makes for a nice change, and is very versatile.
- 4 cloves garlic
- 2 tablespoons pine nuts, toasted
- 2 cups packed fresh cilantro
- 3 tablespoons extra virgin olive oil
- 2 tablespoons grated asiago cheese
- Place everything in a food processor, and pulse to combine, then process fully to make a smooth paste.
