Gourmet snack for when you have spinach in the house. Could use another gourmet style bread.
- 2 slices sun-dried tomato italian bread
- 50 g baby spinach leaves
- 1 teaspoon olive oil
- 1 tablespoon raisins
- 25 g light soft cheese (cream cheese)
- Lightly toast bread slices. In a small saucepan, wilt spinach leaves with olive oil. Season with salt and pepper and stir in raisins. Place on top of toast and top with light soft cheese.
this is wild. I never expected the flavors to be so good and only made one small toast. Have to go make more now! I subbed dried cranberries for raisins and next time will sub some dried strawberries. loved it.
