Chocolate Peanut Butter Creme

- 1 (12 ounce) package silken tofu, extra firm
- 1⁄3 cup honey
- 1⁄3 cup peanut butter
- 2 teaspoons vanilla
- 1⁄8 teaspoon salt
- 1⁄3 cup cocoa powder
directions
- In a blender, puree the tofu until it reaches a smooth consistency.
- Add honey, peanut butter, vanilla and salt. Continue to blend until the mixture is thoroughly combined and the texture is smooth. Remove one cup of the mixture and set aside.
- Add the cocoa powder to the remaining mixture in the blender and blend thoroughly.
- Divide the chocolate mixture evenly among four dessert dishes. Layer the reserved peanut butter mixture over the chocolate mixture, dividing evenly among the four dessert dishes.
- Cover the dishes with plastic wrap and chill for two hours.
- Garnish with chocolate curls or chopped peanuts if desired and serve.
