Choco-Mint Nanaimo Squares

My sister-in-law is not a "sweets" eater, but she enjoyed these.

  1. For base: Stir 3/4 c.
  2. butter, icing sugar, cocoa, vanilla, and eggs until well blended.
  3. Add graham wafer crumbs, coconut, and nuts; mix well.
  4. Press firmly into 13x9 inch pan.
  5. Cream 1/3 c.
  6. butter in medium bowl.
  7. Mix in pudding powder.
  8. Keep beating.
  9. Alternately beat in icing sugar and milk until smooth and creamy.
  10. Beat in food coloring until a mint green colour.
  11. Spread filling over base.
  12. Chill 15 minutes.
  13. Melt mint chocolate chips and milk over low heat.
  14. Spread quickly over chilled filling.
  15. Chill 2 hours before serving.
  16. Cut into bars.
  17. Store in covered container in fridge.
